Speyside Aypple remains small by choice, focused on local fruit, patient processes and making spirits that reflect the place they come from.

Speyside Aypple Brandy begins with locally harvested apples, pressed and fermented naturally into cider before being double-distilled in small copper pot stills. The spirit is then matured in a quarter oak cask sourced from a local independent bottler. The cask was previously used as a first-fill sherry cask to finish a single malt whisky, adding gentle depth and warmth without overwhelming the apple character. Matured slowly, the brandy develops balance, structure, and a clear sense of place, reflecting both Speyside’s orchard fruit and its whisky heritage.
