Speyside Aypple Sorbet is a clean, refreshing dessert made with Speyside Aypple’s apple spirit while the brandy continues to mature. Produced in small batches, it offers a simple, grown-up take on apple sorbet, with the fruit’s natural character and a gentle warmth from the spirit.
Inspired in part by Normandy’s long-standing tradition of enjoying Calvados sorbet between courses, this sorbet works well as a palate cleanser, a light dessert, or as a pairing with cheese or other dishes. It can also be used creatively with savoury ingredients, making it a flexible option for restaurants that value local produce and thoughtful flavour.
With no synthetic ingredients, the flavour remains clean and well-defined, allowing the apple notes to come through clearly. The result is a sorbet that is fresh, balanced, and quietly distinctive, offering a simple expression of Speyside fruit with a light touch of spirit.
